Who doesn't love a hearty bowl of chili con carne on a chilly evening? This recipe is my go-to for cozy comfort food. It's rich, flavorful, and incredibly easy to make, thanks to the magic of the slow cooker. Now, I'll be honest, my version might not be the most authentic chili out there. But it's packed with delicious ingredients and simmers to perfection while I go about my day. So, if you're looking for a hassle-free chili that's big on flavor, you've come to the right place.
What We Love About This Dish:
- Set It and Forget It: The slow cooker does all the work, making this a perfect meal for busy days.
- Flavorful and Hearty: The combination of beef, beans, vegetables, and spices creates a rich and satisfying chili.
- Customizable: Feel free to add your own twist with different beans, vegetables, or spices.
- Perfect for Leftovers: This chili tastes even better the next day!
Ingredients:
1 kg minced beef
2 tbsp olive oil (30ml)
2 tbsp tomato paste (30g)
2 cans (800g) chopped tomatoes
1 can (400g) kidney beans, drained and rinsed
1 can (400g) mushrooms, drained
1 can (400g) sweetcorn, drained
3 tsp "Chili Con Carlos" seasoning by Herbaria (or your favorite chili seasoning)
Your favourite chili peppers
Chili flakes, to taste
Instructions:
- Brown the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the minced beef and cook, breaking it up with a spoon, until browned.
- Combine the Ingredients: Transfer the browned beef to your slow cooker. Stir in the tomato paste, chopped tomatoes, kidney beans, mushrooms, sweetcorn, 2 teaspoons of the chili seasoning, and chili flakes to taste.
- Slow Cook and Savor: Cover and cook on low for 6-8 hours, or until the chili has thickened and the flavors have melded. About 30 minutes before serving, stir in the remaining teaspoon of chili seasoning as well as the chili peppers as otherwise they lose their spice when added too soon.
- Serve and Enjoy: Ladle into bowls and top with your favorite chili toppings, such as sour cream, shredded cheese, or chopped onions.
What You Can Grow at Home:
- Chili Peppers: If you like your chili with a kick, try growing your own chili peppers! Many varieties are suitable for home gardens or pots on a sunny windowsill.
This Slow Cooker Chili Con Carne is my go-to comfort food. It's a simple, satisfying meal that's perfect for chilly evenings and busy weeknights. Give it a try and let me know what you think!
