It's a tradition that's been passed down for generations, and every year, it brings a touch of magic to our holiday table. The combination of juicy chicken, sweet grapes, tart pomegranate seeds, and fragrant honey-butter is simply irresistible. And the best part? It all comes together in one pan, making it a stress-free feast for a cozy Christmas gathering.

4 shallots
6 garlic cloves
About 1 cup red grapes (seedless)
2 tsp paprika powder
1 tsp ground cinnamon
Salt
3 bone-in, skin-on chicken thighs
2 tbsp olive oil
4 tsp balsamic vinegar
25g butter
2 tsp honey
2 sprigs rosemary
100g pomegranate seeds

  • Get Started: Preheat your oven to 220°C (425°F). Peel and halve the shallots and garlic. Rinse the grapes.

  • Sear the Chicken: Heat the olive oil in a large oven-safe skillet over medium heat. Season the chicken thighs generously with salt, paprika, and cinnamon. Place them skin-side down in the hot skillet and add the shallots and garlic. Cook for about 5 minutes, or until the chicken is golden brown and slightly crispy.

  • Add Flavor and Roast: Flip the chicken thighs over. Pour the balsamic vinegar into the skillet and scatter the grapes around the chicken. Carefully transfer the skillet to the preheated oven. Roast for about 20 minutes, or until the chicken is cooked through and the juices run clear when pierced with a knife.

  • Make the Honey-Butter Glaze: While the chicken is roasting, melt the butter in a small saucepan over medium heat. As soon as it starts to foam, stir in the honey and a pinch of salt. Take the saucepan off the heat.
